i am looking to know if i can somehow change the order payment after a user make the order ?
(freeze payment and adjust it if needed)

When a transaction is successful, it is currently not possible to change the payment after the order is created. The customer will have to cancel their order and have to complete another transaction if the payment amount needs to be changed for example. Your feedback is highly appreciated and has been forwarded to the relevant department. At Wix, we are continuously working to improve and update existing features and introduce new ones.
