I have created a collection with a number of text fields. However, the default ‘title’ field is the primary, and none of the other text fields even have an option in the popup (not even a grayed out one) to set as primary.
Why is this? I really don’t want to keep around a column that I don’t need. I also need to make email column primary, but I can’t.

You should able to do it with text type field.
There are two databases there and neither will let me change the primary key

Yes, maybe related. Try it just on any other site that you are an admin there.
I was made admin, and I still don’t have the option. However, the owner was able to change primary keys.
