Duplicate CMS Content

Hi

Completely newbie here so be gentle. On my website I have CMS content which I can upload via my phone which is great.

However I’m wanting separate categories & separate content for each page. after finishing my website of which has fried my brain I’m unable to figure this out. Every time I try to create new content or categories it just duplicates the one I’ve already got.
