I have embedded an excel online spreadsheet into my wix.com website using the html iframe function. If I make changes to the spreadsheet, it currently takes roughly 5 minutes to update on the website. Is there a way to reduce the update interval so it’s instant or close to?

Not really as you are using third party code to embed your excel spreadsheet, so you have to wait until that is updated and applied to your spreadsheet.
There is nothing Wix can do to speed up the actions of third party code, even if you tried using the Wix Table Master app instead and using Google spreadsheets, you would still need to wait the five minutes for it to update.
