How to offer the same service for different prices?

My website offers the same service for different prices (provided by 2 different staff members).
When I choose ‘Custom Price’ I get this message: ’ Clients won’t be charged when booking this service online’.

1. How and when can I charge clients (who sign the service)?

2. Is there another better option to solve this?
