How to set up SKU in Velo?

I have begun to set up a list of things for sale, with different categories of items. I’ve learned that Velo sets up a database of Products in the Content Manager.

But I have not figured out how to set the SKU of different items. Must it be done piecemeal, when the object is on screen? (Thank goodness that I only have 102 items so far…) But can’t this be automated?

Also, isn’t it possible to add another field to Products, so that I can have different categories?
