How to Setup Site Products (Not eCommerce)

Hi, I am after a bit of advice on best practices to set up catalog-style products on my site. (Not e-commerce)

We are an office furniture supplier, but deal mainly in large projects, so not looking for e-commerce at this stage.
Our products are a mix of specific individual items (chairs etc) but also some system/range type products; for example a type of desk, but for that desk you can have different sizes, shapes, configurations etc. So each desk product page would need a fair bit of information with customized layouts and specifications etc.

Bear in mind there will be 70-100 products in total. Maybe more in future. And products fall into 6 or 7 different categories. (Desks, Ergonomic Seating, Tables, Lounges etc)

My Question is this: Would it best to layout the site:

Option A
Manually create specific product pages and product category pages. Add thumbnail images to the category pages that link to the specific products.

Option B
Create 5 or 6 different content manager collections for each of the categories and manage products for each category from there. Any custom page work to a product can be done after to that specific page…

Is there an option C I haven’t thought of?
