Assume a user inputs an edit in a field entry on form…if they hit submit, will a revert button take it back a step? or do they have to recognize the error prior to hitting submit?

The revert button will only work if a save/submit was performed during the current session.
Both actions, save/submit and revert, perform the change on the collection itself.
So for example if a visitor opened the page, and modified a collection item (by submitting) he will have the option to revert the item back to its previous state.
