Is there any way to get the Book button to change automatically to Full when a course maximum number of delegates figure is reached?

It sounds like you’re looking for an option for a service to automatically stop accepting clients once it reaches a certain amount of bookings.
This is a great question and I’m interested in seeing if anyone has been able to implement this 
Clients can currently still click on the book option and move through to the payment screen. Its at this point it tells them the class is full. Ideally they should be blocked from progressing to this point.

So courses that are fully booked should not allow to continue further to the payment flow.
This might be a bug.
Can you please provide your website so we can investigate?
also the service name, time & date for which this issue occurs ?
