how can I set up delivery to pickup point for only a few products and not all?

What are you trying to achieve:
I offer delivery to home address for all my products, now I’d like to alternatively offer “delivery to Pickup points”. But some of my products are too big or too heavy to be accepted for pickup points. Is there a way to offer “delivery to pickup points” for only a small selection of products and not for all?
What have you already tried:
I’ve read the tutorials for setting up delivery options, but I find the delivery methods always apply to ALL products or none.
Additional information:
It would be useful to be more flexible in the delivery options so to be able to adjust them to products that are very different in size and weight.
