Can I create a 301-redirect without redirecting a subdomain?

301-Redirect without affecting subdomain:
Hello there, I am working on a relaunch project and would like to create a 301-permanent redirect as soon as I am done with the new page (with new domain).

But I have a running ads campaign on a subdomain and would like to keep that landingpage at least for a while to reduce the risk of loosing too much traffic. Is that possible or would a 301-redirect also apply to all subdomains?
