Sounds like an interesting project. This is definately possible in Wix, but you’ll need some coding experience.

The most important point is, that the PMS has to have an API which you can access. Then using Wix Fetch you could send the Values of the Input elements to that API, which then returns an answer (i.e. Available / Not Available, etc.)

Wix can support real-time updates from the PMS, but that depends heavily on the programming and integration of your PMS API.
