Being only new to going online, we were wanting to use our store and product pages as a catalogue of sorts where customers could browse what we have available, add them to a wishlist, then place an order with us directly over the phone, in store or via email. We wanted to pursue this model given our stock fluctuates quite a lot and especially in these early stages, it is a bit too much to create an inventory and online ordering system. We want to keep our service personal, and be able to engage with the customers to find their custom pieces. So, is it possible to have the option to remove the shopping cart altogether and just have a wishlist?

While some of what you need might be possible with Corvid, there are other issues regarding the Store configuration (e.g. removing the shopping cart), that Wix Customer Care is better suited to assist. I say this since I don’t know how to remove the shopping cart from the Store, but Wix Customer Care might know how this is done.
Some things I came up with playing around:

it’s possible to remove the “Add to Cart” and “Buy it Now” buttons

a “Wishlist” button appears on a product page when a Wishlist is added to the site
That sort of gives you want you want. I would suggest playing around with the Stores configurations and settings to see if you can achieve the model you want.
