I spent hours last night making major edits to current website in Wix Editor (we are a coffee shop, so the menu changes seasonally), which I will publish on Dec 1. In the meantime, I would like to make some minor edits to our currently published, fall-themed site. Can I edit the current website (saved as a prior version) while there are pending changes in Editor to be published in the future? Or more simply put, can I switch back and forth between versions in Wix Editor? Hope this makes sense. I’m new to website design and Wix.

Technically, yes, although it might get a little messy.
You can “roll” your site back to a previous version, make changes, then publish it. Then “roll” it back to the edited version for Dec 1st and publish that when ready. Does that make sense? Here’s an article about Site History - Viewing and Managing Your Site History | Help Center | Wix.com
