Is it possible to use WIX Pricing Plans to sell my online course using a payment plan? Specifically, can I set it up so a new module or section of the course is released to the student as each monthly payment is made?

Not necessarily.
Not sure this would work in the way that you need it to. I’ve never done it this way, but you may be able to create your course as a scheduled course so that you can release sections after a certain amount of time. You could schedule step or lesson one on week one day one, step or lesson on week four day one, and so on or a similar format. And set-up your pricing plan to sort of line up with how the lessons are released.
