Booking Time/Appointment Issue Overlap

I have a client who has a charter boat company. Only one boat - trips are offered at one or 2x a day and go for several hours. If there is a 3 hour trip, it can only be offered at 9:30am and 12:30pm. How can I get only those to options to show up for just that service? And for some reason the times are only showing up on the hour 9:00 or 10:00, but no 9:30.
I thought about having him block off his calendar from 10-11, but he has other services that might be offered at those times? Help!

@simone You also need to edit the settings in your dashboard to edit the booking settings. That will allow you to set your time slots to be 30 minute intervals.
