In my project is mandatory to upload the pictures and descriptions ONCE to a list or database and then I have to make different galleries from those entries, even some pictures would appear in different categories/sub-galleries. I can imagine this by adding some tags or keywords to each picture entries, and bulid some galleries based on this tag/keyword.

Yes - you can do that by adding multiple datasets to the page, each one will have a different filter according to the tag/keyword.
Then connect each gallery to the relevant dataset. That’s it
