I am launching a subscription box store and during checkout, we collect some important information about the customer which allows us to send them the right product, however with the apple/google express pay, they are able to bypass the form that the regular checkout requires in order to complee checkout. is there a way to also have the express payment require customers to fill out the form?

I don’t think so. You can either enable it, or disable it. The very purpose of ‘express’ payment buttons is that users do not have to fill in all their details during checkout - they’re fetched automatically from their Google / Apple accounts. So if that checkout form is required, you’ll have to disable the express payment buttons - only then will all your users navigate through the standard checkout flow. However you can still connect the payment methods that you desire from the payment settings in your site’s dashboard.
