All of a sudden, all my mobile pages are showing odd widths. If I try to change manually, it reconfigures the desktop version.

Make sure nothing is using pixels. I recommend a grid being 1fr and all elements and their margins and padding not exceeding 100% in width within that frame.
Along with this you can use stretch with this container, and change the units of measure for it in the inspector panel
