Product Filter connected to a Product Gallery via the Store app, the filter layout (including plus/minus icons) is not fully customizable via the Design panel by default. The expand/collapse icons for filter categories (like Color, Size, etc.) are auto-generated by the built-in store filter component, and do not expose icon change options directly in the UI.
