I have a staff member with the default “Bookings Staff Member” permission. I would like for them to be able to select the “Notify client with an email” box when they are modifying a session. I’ve attached a screenshot below for reference.

You won’t get any answer for this, as long as you do not describe your issue in more detail.
You even do not mention or describe your SETUP!
- On which EDITOR are you working? → Wix-Editor, Editor-X or Wix-Studio?
- Which elements do you use, or which elements are included in your issue?
- Are you using APPS ? → Which kind of APPs ? Wix APPs like → Wix-Bookings?
APPs are in general not customizable, or partially customizable.
If you are using Wix-Bookings → Take a llok onto the VELO-API-DOCs to find out → what are your options and if corresponding APIs are available for your needs.
Next time → describe your issue in more detail and mention every single step of your setup.
There are 1000-ways of how you can generate one and the same RESULT.

Thank you for your response. I am using the basic Wix Editor. I’m not sure what elements or what a VELO API DOC is. But I’ll be happy to give more context into the situation!

Under this setting, when that staff member tries to change/edit a session on the booking calender in Wix Bookings, the box “Notify client with an email” is grayed out. I am wondering why this is grayed out, and what permissions would be required to allow this staff member to notify a client with an email. Please see the above response for a screenshot of the issue.

Yup, it just sends me to Bookings Calendar > Staff, which is unhelpful.
I’ve have tried changing varying roles and permissions to see which ones work, but I haven’t found any that work without giving full access to the booking calendar. Ideally I would not like my staff to book sessions on their own. They should only be able to modify them, and also send an email to clients.
The most confusing thing to me is why it is grayed out in the first place – I think there should be a toggle feature or a permission somewhere
I am not using Wix-Bookings at all, so i can not really help here.
