What I’m trying to do
I want my clients to be able to book the online courses

I tried duplicating the service and scheduling new sessions but it still doesn’t allow clients to book/enroll

From the page and images you shared, it seems the service you created are courses which means that customers will be going to all of the sessions - in this case, all 280 sessions.
Since the first day was August 16th and users can’t join, I believe you might not have the checkbox for Book a course after start date.
However, considering the language of an 8-hour course, I think Classes would work best for this so that multiple customers can book a session on the day but it’s for independent days.

Just to mention it as well, these are meant as services where they will be booking time with a person, either physically or online for the block of time. If you are instead planning on doing this as a “course” like say an online program/learning management system (especially since I saw users get a certificate upon completion), then Online Programs might be the application you want to do. Note you could do both in instances where customers can choose to be in-person or do so online at their pace.
