How can I make it so different dynamic pages show different product galleries?

I’m trying to create a store with multiple store pages, one for t-shirts, one for hats, etc.

I want to have product galleries showing hats on the hat page, shoes on the shoes page, etc.

At the moment, product galleries show the same products for all pages.
