I keep having an issue where a random font size gets used despite explicit font settings. It’s easier to show this in an image. See below. Even though the font size is set to 18px with a max of 18px and a minimum of 16px, the form randomly chooses 38px.
This happens with forms, blogs and shops and it happens in every site I build so I either have an incorrect setting somewhere or this is a bug. Either way, I’d love to get this fixed and am open to any ideas.

Unfortunately - some apps still don’t support scaled typography (namely, the ones you mentioned). As far as I remember, it’s using the default styles when you add the component.
In the form design panel you have open, if you change the “Paragraph 2” dropdown to a different site style, and then return it back, you should get the font size defined for that style.
I appreciate it’s a little confusing, and something the team is aware of and working to address

Hopefully this gets resolved soon, but that workaround will do for now.
