We renewed our Premium Plan too late, and the interface now says our old domain name is not currently available. Does that mean it’s taken? Is there no workaround?

Wix is a domain registry, it does not OWN the domains - you’re the one who purchases ownership of them
As far as I know, Wix reserves them so that you are still the only one able to renew domain ownership for about a month after its expiry (not sure technically how)
Afterwards, they go public again. If your domain is no longer available, my guess would be someone has already purchased ownership of it
This is not a Wix issue, as again, the domain is not owned or managed by them, they simply served as sort-of a broker
You could use a WHOIS service to lookup the domain’s registration, see whom it might belong to
