I’ve tried logging out/in, didn’t work.
After I click delete …
What plan are you on ?
It seems you will need to have a premium plan that will accept payments to use product page variants.
I have not used this new product variant page so cant really comment anymore info.
It is a little odd that it would show needing to upgrade to remove the option 
I’ve not encountered this myself, so not aware of any workarounds. If you haven’t already, I’d recommend opening a ticket - Contacting Wix Customer Care for Support | Help Center | Wix.com
